These
cookies are addictive; you just can’t stop eating them!
They are easy to make and can be given as giveaway as well.
½ cup quick oats
½ cup shredded coconut
½ cup sunflower seeds
½ cup of raisins, chocolate chips, cranberries
or any other type dried fruit
¼ cup of sugar (you can even reduce it, the
cookies are very sweet)
¼ cup of vegetable oil
1 egg (you can try and replace it with tahini)
1 tsp of vanilla extract
Preparation
Mix all dry ingredients (this can be done ahead
of time).
Add the oil, egg and vanilla extract.
Scoop little balls with a spoon on a
baking sheet.
You can shape them any way you like. I made
some as balls and some flat. The cookies don’t raise and don’t change their
shape so make sure that you shape them nicely. Also, you don’t have to space
them much for this reason.
Bake 15
minutes in 170C/338F degrees until the cookies turn light brown.
The
recipe yields about 17 cookies.
