Burghul with Chickpeas and Carrots is a vegan dish
is tasty, nutritious and rather easy to make. It is so good that everyon would love it!
Ingredients
1 cup of burghul
2 cups of water
Half a cup of chickpeas
1 diced onion
2 medium carrots, diced into small pieces
Garlic, salt, pepper, cumin
Preparation
Soak the chickpeas overnight. Cook in a pressure cooker for 20
minutes with half a teaspoon of sodium bicarbonate, or until soften in a regular
pan (40-50 minutes).
Fry the onion and carrots for a few minute until they start
changing their colors. Add the burghul and fry for a minute. And water, garlic,
salt, pepper, and a little bit cumin and bring to boil. Cook until all the
water dissolves (about 20 minutes). Add the chickpeas.
Serve warm.
