This pink beetroot
salad has s a lovely color. It is dairy but can be prepared in a vegan
version. It is a must-have in my family in every holiday dinner but we have it year-round.
Ingredients
400 grams Beetroot - cooked
1 Tbsp Mayonnaise (make your own or buy there are also vegan brands)
1 Tsp mustard
3 Tbsp Sour cream or white yogurt (only for the dairy version)
Lemon, salt, sugar
Preparation
Grate the beet
Add the mayonnaise, a little bit of mustard, sour cream,
lemon, salt ans sugar.
The amounts depend on the sweetness of the beetroot, although I suggested quantities but you'll need to adjust the tastes and add sugar if the beet is not sweet enough. Refrigerate and serve cold!
